Tonight i just finished making a Mock stir fry chicken with yellow rice and vegetables.
Ingredients
1. Bag of any brand Vegetarian meal starter Mock Chicken
1/2 cup Orzo (pre brown)1.5 cups yellow rice dry (your choice of brand)
2 med. carrots
1 small onion sliced
1/2 bag or 1 can snow peas (can sub for regular peas if preferred)
1 medium or 2 small stalks celery chopped to your taste
2 tbl. spoons garlic powder
pinch of black pepper or white pepper (which ever you have handy)
3 tbl spoons your choice teriyaki or soya sauce ( any brand will do)
Pre brown your Mock chicken strips first, leave hole as they are in the bag or chop to desired size. after lightly browned set aside, and pre brown the orzo in 1 tsp. butter or margarine , after orzo is light and golden, add the yellow rice in the same sauce pan or skillet your now using, to that add 3 cups water and bring to boil, cover and let simmer till rice and orzo are soft and majority of water has evaporated , once that’s done add in the chopped vegetables and 1/2 cup hot water and let cook till tender, allowing the rice and orzo to absorb some of the flavors from the vegetables , once everything is tender then add in the mock chicken and soya or teriyaki along with your garlic and pepper. I didn’t include salt since i don’t use salt in my cooking so that would be (a little salt to taste) if required.
