Grilled Veggie Sandwich (serves 4)
Ingredients
1 small zucchini
1 small yellow summer squash
1 small eggplant
1 medium sweet onion, sliced
1 large sweet red pepper, cut into rings
4 whole wheat hamburger buns, split
New chipotle mayo
1/4 cup crumbled feta cheese
Sliced provolone cheese
Garlic, minced
Instructions
Cut all of the vegetables into slices, place them into a baggie, drizzle olive oil on them, and add garlic and other seasonings to taste. Grill the vegetables, covered, over medium heat for 4-5 minutes on each side or until crisp-tender. Remove them and keep warm. Grill the buns, cut side down, over medium heat for 30-60 seconds or until toasted. In a small bowl, combine the chipotle mayo, feta cheese, garlic, salt and pepper and spread over the bun bottoms. Top with the vegetables and replace bun tops.
